Ingredients for this recipe

Hainanese Chicken:
  • 1 whole medium Chicken
  • ¼ tsp Salt
  • 1 Fresh ginger, cut into ¼ inch slices
  • 1 bunch Fresh Scallions
  • 1 gallon cold water
  • 2 Tbsp Sesame Oil
Hainanese Rice:
  • ¼ cup Sesame Oil
  • 2 Tbsp Chicken Fat, skimmed from chicken broth
  • 2 cloves Garlic, minced
  • 1 Tbsp fresh Ginger, minced
  • 1 tsp Salt
  • 2 cups Long Grain Rice, rinsed and drained
  • 2 cups Chicken broth
Chili sauce:
  • 2 Tbsp Sambal, Sriracha or Soybean Paste
  • 2 Tbsp Sugar
  • 1 Tbsp. Garlic, minced
  • 1 Tbsp fresh Ginger, minced
  • 1 Tbsp Lime juice
  • 2 Tbsp Chicken broth
Ginger Garlic Sauce:
  • 2 Tbsp fresh Ginger, grated
  • 2 Tbsp Garlic, minced
  • Salt to taste
  • 3 Tbsp Peanut Oil
  • 1 Tbsp Rice Vinegar
Soy Dipping Sauce:
  • 1 Tbsp Mega Prime Oyster Sauce
  • 3 Tbsp Dark Sweet Soy Sauce
  • 1 Tbsp Light Soy Sauce
  • 2 Tbsp Knorr Chicken broth
  • 1 Cucumber, thinly sliced
  • 1 bunch fresh Cilantro
